Bill Bryant’s fruit yogurt parfait

Bill’s Fruit Yogurt Parfait

2 cups plain yogurt (vanilla flavored, if you prefer)
2 cups of your favorite granola
2 cups fresh berries (raspberries, blueberries, strawberries (hulled and sliced), and/or other fruit such as bananas, peaches or mangos)
4 T. honey

Line up 4 parfait, white wine or other tall glasses. Spoon 2 T. of yogurt into each glass. Smooth surface after each layer.
Spoon 2 T. of granola over top, followed by 2 T. of fruit. Drizzle a little honey over the granola layer.

Repeat all the layers and drizzle the remaining honey on top.
Along with all the heavy, rich (and delicious) holiday dishes, it’s nice to have something a little lighter. This always hits the spot. Of course, I’ll make sure to get in a good run as well, to ease the guilt of a big dinner!
