If Life gives you Lemons……………. Make Lemonade
In a blender place
¼ cup dry lemonade mix
¼ cup organic granulated sugar
1 fresh squeezed lemon
1 Pomegranate peeled, cored, seeded & chopped
Puree’ on high speed 30-45 seconds
Add to a glass gallon Pitcher
1 cup Pomegranate Nectar
1 cup Lemonade Nectar
Fill the rest with cold water. Stir & refrigerate.
Wash & dry one Whole Chicken & place on a ½ full can of 7up (or Lemon-lime soda) sitting right side up. Place in a metal or aluminum roasting pan
Season with Celery Salt seasoned salt & Bourisin Poultry seasonings & place a strip of fresh rosemary inside.
Roast in a 350° oven or on a covered grill for 2 hours.
Squeeze the juice of a whole lemon over chicken & allow to rest 20 minutes.
Lemon Icebox Pie
Use a frozen ready Crust: Yield 2 Pies
10 egg yolks
2 cans sweetened condensed milk
1 cup fresh squeezed lemon juice
3 spoons grated lemon peel
Whisk until blended, Pour into shells
Bake @ 375° 25 minutes , Cool & Top with meringue
10 egg whites beaten stiff add 1 tablespoon cornstarch, dash vanilla & ¼ cup confectioner’s sugar.
