Minestone Soup

1 package mixed dried beans
1 onion, chopped
1 garlic clove
6 - 8 cups water
1 can tomatoes (about 2 cups)
Italian seasonings to taste (such as oregano, basil, rosemary, thyme, marjoram)
1 meaty ham bone
Dried pasta of preference

Soak bean mix overnight. Rinse. Put in pot with all other ingredients except pasta. Cook in crock pot for 6 - 8 hours on high. About 45 minutes before serving, add a handful of pasta. Serve with Parmesan cheese.

*Note: Pasta can be fully cooked the day before and placed in a plastic bag with 1 tasp. of oil, then tossed in soup right before serving.)
