Buttermilk Pie ‘With a hint of lemon’

3 eggs
1 stick butter
1 -3/4 cup sugar
1 tsp, vanilla
1 tbsp. Cornmeal
1 tsp lemon juice
½ cup buttermilk
1 tbsp. lemon rind
3 tbsp. flour
3-4 tbsp. coconut (optional)

Preheat oven to 425 degrees. Mix all ingredients well & pour into
An unbaked pie shell. Bake 10 min then reduce oven to 350 degrees continue baking for 35 minutes.* page 38 Scratch Cooking 2.
