PIKEVILLE, Ky. (WYMT) - Breakfast lovers rejoiced in Pikeville Tuesday during the grand opening of a new restaurant on Second Street.
Southern Biscuit and Grill is now serving breakfast into the afternoon. This is a new venture for Gary and Amy Collins, the owners of the former Smalltown Diner.
The couple said the idea for all-day breakfast comes from research given to them by the Pikeville Main Street Program. They said they are happy to fill the demand for the community.
Aside from hiring six people, the grill will support the local economy by sourcing some of its food items locally.
"We do use a local honey provider and we also use as much local and Kentucky Proud products as we can find," said Gary.
He said the potential for growth is a possibility and would result in more local jobs.
"If the response continues with the afternoon crowd, we'll eventually extend the hours on out, as late as eight or nine at night. At that point, we would have to include more staff," he said.
The restaurant is open 8 a.m. until 5 p.m. Monday through Friday and 9 a.m. until 2 p.m. on Saturday.
